* A highly organized Sous Chef with strong experience managing teams, stock control, and rota planning.
* Calm, focused, and hardworking, with excellent communication skills.
* Passionate about fresh ingredients, whole carcass utilization, and Mediterranean flavours.
* Experience with open-fire cooking and sauces is highly desirable.
* Able to lead by example, fostering a positive team dynamic.
